Green almonds are available in the early spring for a very brief 8 week period, beginning typically in late March or early April.
Green almonds have a typically almond shape but are distinguishable by their fuzzy and velvet-like green outer skin. The inner flesh of the Green almond is unique, offering a soft jelly consistency within a skinless nut. The inner nut has a delicate creamy outer skin. The soft internal flesh offers a unique flavour with mild floral and grass-like notes, with an overall fruity savour.
They are sliced for fruit salads or tossed for green salads or used for pastas and stews.
