Description Einkorn flour is derived from the Hittite word zız. It is the oldest wheat variety known in Anatolia for 10,000 years. It decorated the Hittite and Phrygian tables. This wheat is known as the ancestor of wheat with its 2n-14 chromosome structure. The hard and layered crust structure of Einkorn wheat and the non-uniform long and short ears make it difficult to produce and use. Wheat must be harvested by hand, as the spikes are long and short prevents the harvest with the machine. This wheat has low carbohydrate value but high protein value. While the protein amount is 14-25 / 100 g in einkorn wheat, it is 10-12 / 100 g in other wheat. All of our einkorn flours were prepared by milling in stone mills, without removing the bran germ from it. Benefits
